Mix in a cup of whole milk, some salted butter, and a touch of ground black pepper, and you’re done.

You’ll want to prick each of your potatoes all over using a fork, then rub it all over with butter and double-wrap it in tin foil. Bury your wrapped potatoes in the hot coals of your BBQ and cook them until they’re tender or around 30 to 60 minutes.

In the meantime prepare some sour cream by adding freshly cut chives and a bit of sea salt to it. Enjoy together alongside your BBQ meats.

Top tip: you can actually make your own cheese curds if you can’t get a hold of them anywhere, though it requires a few specialty ingredients. Instead, opt for a block of mozzarella cheese (the kind that’s frequently sold for pizza) and shred or tear it into ‘curds’.

Top tip: sharp-flavored cheeses are better choices for potatoes than milder ones. Go for some sharp cheddar, Swiss gruyere, or parmesan.
