Beer Bacon and Blue Cheese Potato Salad

Servings 6 -8 servings

Ingredients
  

  • 6 slices bacon
  • 2 lbs mini red potato cut into bite sized pieces
  • 1 cup sour cream
  • ½ cup blue cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons IPA
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon paprika

Instructions
 

  • Preheat oven to 350.
  • Add the bacon to a wire rack over a baking sheet.
  • Bake until the bacon is crispy, about 15 minutes.
  • Remove the bacon and the wire rack.
  • Raise the oven to 425 degrees.
  • Add the potatoes to the pan, toss in the bacon grease. Return the pan to the oven, bake for 15 minutes, toss the potatoes, bake until potatoes are fork tender, about 10 additional minutes. Remove from oven, allow to cool.
  • In a large bowl stir together the remaining ingredients.
  • Chop the bacon, add to the bowl along with the potatoes. Toss to combine.
  • Serve warm.
