If you don’t have that many leftovers from one meal, just keep freezing them every time you cook and use them to make broth when you have enough. This way, you’ll do something good for the environment and save money too. Plus, the broth will taste especially good if you use many different kinds of vegetables.

You’ll need:

  • 300 grams of onion
  • 350 grams of greens
  • 300 grams of tomatoes
  • Two stalks of parsley

This recipe involves making broth powder rather than broth itself. Here’s how you do it:

  1. Wash the greens and tomatoes thoroughly.
  2. Chop all the ingredients as finely as possible.
  3. Spread some baking paper onto a baking stray and distribute the ingredients across it.
  4. Heat your convection oven to 75 degrees and place the tray inside for about six hours. It’s best to clamp a wooden spoon in the oven door so that the liquid can escape. Alternatively, you can open the oven door from time to time (in summer, you can save energy by placing the tray in a sunny, slightly windy place).
  5. Leave the vegetables to dry and stir them every now and then.
  6. Once everything has sufficiently dried, use a food processor to chop the vegetables.
  7. Finally, season the powder with salt and put it into sealable jars.

Since this recipe is for producing a powder, there’s no need to cook the broth. Instead, dry the vegetables and then process them into a powder. It works like this:

  1. Wash the wild garlic, goutweed, oregano, parsley and celery leaves thoroughly.
  2. Dry the herbs as well as possible. This works best with a salad spinner.
  3. Cut the herbs into small pieces.
  4. Finely chop the scallions.

Making beef stock is relatively complex and takes a long time, as there are several different steps involved in the overall cooking process. Therefore, it’s best to make it in bulk and then freeze some. Here’s how to make your own beef stock:

  1. Place the beef bones in a saucepan and fill it with water.
  2. Heat the water and once it has reached a rolling boil, leave the bones in for five more minutes before taking them out.
  3. Wash the bones and pat them dry.
  4. Preheat your convection oven to 200 degrees and put the bones in as soon as the oven is hot. Leave them in for 50 minutes.
  5. In the meantime, fry the onions and garlic in a saucepan, adding the tomato paste shortly after.
  6. Take the bones out of the oven and add them to the onions, garlic and tomato paste in the saucepan.
  7. Add two liters of water and season with salt, pepper and vinegar.
  8. Bring the whole thing slowly to the boil over a medium heat.
  9. Now let the stock simmer for three hours and keep removing any foam that forms on the surface.
  10. Wash the greens, peel them if necessary and cut them into chunks.
  11. After three hours, add the greens and parsley to the saucepan and cook everything together for one hour.
  12. Finally, filter the finished stock through a sieve.
