California Strawberries Pin to Win Contest

Spicy Sweet California Strawberry Tonic (Click For Recipe)

One of the best things about living in Southern California is the abundant and incredible produce we have. Although it doesn’t have as high of a marque value as the weather or our celebrity residents, I’ll take strawberries over a Kardashian sister every day of the week. And because of the aforementioned weather fortune, strawberries grow all year long here. Every day of year you can get yourself some California strawberries, so it won’t surprise you that they are in my fridge nearly constantly. I might as well have a drawer just for them.

When California Strawberries asked me if I would tell you about the California Strawberries For The Holidays Pin to Win Contest, I didn’t hesitate. I love everything about strawberries, and I really want one of you to win the $250 cash prize.

$250 dollars would be great for the holidays, right? And this will give you a GREAT excuse to stay on pinterest a few extra minutes, your husband can ease up off your back about it, you’re trying to win some Holiday spending cash! Pinterest AND free money? It’s like a dream come true.

I even caught the Strawberry Fever, here is my Strawberry pin board.

Below are the details, super easy way to win some cash and to justify all that time you spend on pinterest.

Mini Drunken Pumpkin Coconut Pies

    For the Dough
  • 1 1/3 cup flour
  • 1/4 tsp salt
  • 1 tbs sugar
  • 1 stick cold butter, cut into cubes
  • 2 tbs ice cold beer (high ABV works best)
  • For the filling
  • 2 cups pumpkin puree (if using canned, make sure it is not pumpkin pie filling)
  • 2 eggs
  • 3 tbs flour
  • 1/2 cup coconut milk fat, scraped off the top of a can of full fat coconut milk
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup pumpkin ale
  • 1 tsp coconut extract (can sub vanilla extract)

  1. In a bowl, add the flour, salt and sugar, mix to combine. Add the butter cubes and rub into the flour with your fingers, or a pasty cutter, until well combined. It will resemble coarse meal. Add the beer and mix until combined, adding more until all the flour is moistened and the dough is able to form a ball. Form into a disk, wrap tightly in plastic wrap. Refrigerate for at least an hour.
  2. Preheat oven to 350. Roll out dough on a lightly floured surface. Cut dough into 4 inch circles, a large margarita glass works wonderfully for this.
  3. Spray the wells of 12 to 14 muffin tins with butter flavored cooking spray. Place each circle into a well and gently press into shape, allowing for a bit of an overhang.
  4. In a bowl, add all of the filling ingredients, whisk until well combined. Pour into mini pie crusts. Bake at 350 for 18-22 minutes or until the filling has set and no longer jiggles when the pan is shaken.

What a delicious way to use strawberries, I really like those layers!
I love strawberries, but unfortunately have to wait until spring/summer to enjoy them again. They’re just perfect with a little sugar and whipped cream, can’t wait!
