Eggnog French Toast Bake

I really have to confess that I don’t much care for Eggnog. But, to be fair, I guess I’ve never really had a great version of it.

I’m open to suggestions if you have any.

I does make an excellent coffee cream, and a great ingredient in desserts. Plus, it just tastes like Christmas when you bake a pan of french toast with it, with the added bonus of making your house smell amazing.

This is the perfect make ahead breakfast for Holiday guests. It takes about 5 minutes to put together, cover it and let it sit over night and in the morning all you have to do is throw it (figuratively, of course) in the oven and sit back and watch the wonder and amazement on the faces of your guest that you pull off something so tasty without even breaking a sweat.

But, you really should wait until you have guests or you will eat the entire pan all by yourself with your dog eyeing the pan and judging you the entire time.

Eggnog French Toast Bake

Ingredients

  • 1 loaf texas toast style thick sliced bread (or a loaf of French bread) cut into 2 inch cubes (about 5 cups)
  • 2 1/2 cups eggnog
  • 6 eggs
  • 1/3 cup brown sugar
  • ½ tsp nutmeg
  • 1 tsp cinnamon

Instructions

  1. Arrange the bread cubes in a 9×13 inch baking pan.
  2. In a separate bowl, whisk together the remaining ingredients. Pour over the bread, toss lightly to coat.
  3. Cover and refrigerate for at least 3 hours, and up to 24 (I recommend refrigerating overnight).
Preheat oven to 350. Bake french toast uncovered for 35 minutes or until golden brown. Serve warm.

For reals. I would need to drink the bourbon first because I would need to be drunk in order to choke down a tall glass of thick milk. I could gag. But the flavors are amazing when you can eat them and not drink them. I had eggnog creme brulee once that totally changed my mind about the eggnog flavors.

If you want a good over-the-counter version, I love Southern Comfort for super rich or Silk Soy Nog for a lighter version. Both go well with dark rum topped with cinnamon. But I definitely prefer baking to drinking in this case. This looks amazing.

Thanks! I love Shine. And, it wasn’t until I was making this and searching in the fridge for my coffee creamer that I finally realized how great eggnog is as a creamer.

Krissi December 4, 2012 um 8:14 pm

If you don’t like the thickness but like the flavor try milk nog. If I buy regular egg nog I usually mix it with milk so it isn’t so rich.

Call it French Toast Bake all you want, but this is bread pudding.

But what’s in a name? A bread pudding by any other name would still taste delicious. If calling it a French Toast Bake means you can have bread pudding for breakfast, I’m cool with that.

Hi, we tried this and followed the exact directions. It turned out soggy and mushy and runny. We even put it back in the oven for 15 minutes. It was like a runny bread cinnamon soup. Are the proportion correct?

Reply

Jackie December 23, 2012 um 10:55 am

I’ve had several people make it and they said it turned out like mine did. Did you use thick slice bread? Regular sandwich bread isn’t dense or thick enough.

Reply

Samantha December 23, 2012 um 8:45 pm

I just prpped this for tomorrow morning morning, I added vanilla and some epicure maple spice and then added apples to the top with a sprinkle of both maple and cinnamon…cannot wait for the morning!

Christina Sabor December 24, 2012 um 12:45 am

Turned out great! I changed the ratios a bit to fit with the bread I used. I just made sure it was all soaked, but not "swimming" in liquid.
I also made a caramel sauce.

Sounds delicious! Can you freeze this after baking? I’d like to use up our extra eggnog and loaves of bread, but we’ve eaten so many sweets this past week, this seems too much right now.

Reply

Jackie December 27, 2012 um 12:21 pm

Not sure, but you CAN freeze eggnog for up to a month. Put it in a large freezer zip lock bag (might need another set of hands for that!), get the air out and just put it in the freezer. Revisit it in February 🙂 And bread freezes really well too.

I have no idea where I went wrong. Maybe not enough bread? Wrong kind of bread? The store didn’t have Texas toast bread for some reason and I couldn’t find French bread. I grabbed a loaf of brioche. It’s just me and my son so I did half the loaf. The slices were as thick as Texas toast and I halved the recipe to compensate for less bread. For the life of me I could not get this to cook through. I have been messing with it for about 2 hours now and nothing I do is working. I have given up on it hahaha.

I will try it again. I’m sure it works. Next time I’ll hopefully have the right kind of bread and see if that makes a difference.
