Pumpkin Hummus

So, what do you do when you roast 4 pumpkins and ย end up with several containers FULL of homemade pumpkin puree? AND you have a husband that "Isn’t really crazy about that whole pumpkin flavor"? Besides the Pumpkin Pie With Bourbon Whipped Cream I made, and the Pumpkin Cranberry Cookies, I made hummus. Hummus, cookies and pie that I had the sole responsibility of consuming, which also turned into a few extra, much needed, workouts and spin classes. Totally worth it.

This hummus also became the "dressing" on my salad for lunch, and the schemer for my ham sandwich at lunch the next day. So many yummy uses.

Pumpkin Hummus

1ยฝ cupย  Cooked Garbanzo Beans, drained and dry

1 cupย  Pumpkin Puree (step by step for how to roast a pumpkin)

2 Tbsp Tahini (sesame paste)

2 Tbsp Olive Oil

ยผ cup Fresh Lemon Juice

ยฝ tspย  Salt

ยฝ tspย  Ground Cinnamon

ยฝ tspย  Ground Nutmeg

2 cloves Garlic, minced

ยผ tspย  Coriander

Put it all in a food processor and blend it until its nice and creamy. Serve with bread, pitas, crackers, or veggies.

I made this today for my thanksgiving dinner tomorrow. Tried a few bites (ok, maybe more then a few) before storing in in the fridge for tomorrow. Amazing! Only problem I had was that I needed to add a bit more liquid to it to get it to puree up right. I only added about a teaspoon more and there still wasn’t an overpowering lemon taste. Thanks so much for the recipe! Arigato from Japan!

Oh good! Glad you liked it. I do like my hummus thick, and I know everyone has a different preference. You can always add more olive oil as well. Enjoy it tomorrow, I think it’s better the next day!
